Production fell sharply during the Meiji Restoration of 1868, when carrying swords was banned entirely. Many swordsmiths and artisans switched from swords to kitchen blades, and some started creating superior products by applying their centuries-old knowledge of sword-making. Japanese knives have earned a dedicated following among culinary professionals and passionate home cooks. Traditionally made with carbon steel blades, many high-performance knives these days are produced with Japanese stainless steel for excellent durability and easy maintenance.
