Description

Handcrafted in Kochi Prefecture, the Tosa Ginsan Nakiri Vegetable Knife carries forward the centuries-old tradition of Tosa cutlery, one of Japan's most respected blade-making regions. Produced by Kurotori, a family workshop with roots dating back more than 150 years, this knife reflects generations of blacksmithing knowledge and craftsmanship.

Forged from stainless steel, the 6.7 in (17 cm) blade delivers exceptional sharpness, edge retention, and corrosion resistance. Often prized as a stainless steel that sharpens and cuts like traditional carbon steel, Ginsan offers outstanding performance with easier maintenance for everyday use.

The tall, rectangular nakiri profile is designed specifically for vegetable preparation. From cabbage and onions to carrots, herbs, and leafy greens, the blade's straight edge creates clean, precise cuts while providing ample knuckle clearance for efficient chopping. Finished with a warm walnut wood handle and polished blade, this knife balances traditional Japanese craftsmanship with modern practicality. Whether you're preparing a simple weeknight meal or an elaborate seasonal feast, the Tosa Ginsan Nakiri Vegetable Knife offers the precision, durability, and beauty that define authentic Japanese cutlery.

More Details

Kurotori

Founded in the late 1800s in Shimanto, Kochi Prefecture, Kurotori has been crafting a wide range of blades for over 150 years. The workshop carries on the spirit and skill of Tosa forged knives, a craft born from the region’s long tradition of blacksmithing for daily tools and farming implements. Each blade is hand-forged with care to combine lasting sharpness with everyday usability, preserving the craftsmanship that continues to define Tosa.

Japanese Knives

Japanese culinary knives (hōchō, 包丁) are world renown for their outstanding quality and artisanal craftsmanship. Hundreds of years ago, blade technology advanced tremendously during the samurai era, when swords were in great demand. Production fell sharply during the Meiji Restoration of 1868, when carrying swords was banned entirely. Many swordsmiths and artisans switched from swords to kitchen blades, and some started creating superior products by applying their centuries-old knowledge of sword-making. Japanese knives have earned a dedicated following among culinary professionals and passionate home cooks. Traditionally made with carbon steel blades, many high-performance knives these days are produced with Japanese stainless steel for excellent durability and easy maintenance. Consider the grip, weight, length, material, and quality when choosing a Japanese knife and see the difference in your chopping skills and final dish.
